Taco Tuesday - Super Easy BBQ Pulled Pork


Today's Taco Tuesday post features a minimal ingredient, super easy supper. The best kind for busy days! It's a slow cooker meal so you'll need to plan ahead to get your meat simmering early on in the day, but come dinner time you'll be twelve kinds of happy. 


The Filling: 
This is actually just my very favorite recipe for pulled pork. I usually serve it on buns, but switched it up for Taco Tuesday and served the meat on homemade corn tortillas. I might actually like it better this way! You'll need a 3-5 pound pork shoulder, BBQ sauce (I always use Sweet Baby Rays), and a can of diced pineapple. I mean, that's three ingredients. Four if you include the all-purpose seasoning I coat the meat in. Like all slow cooker recipes, the crock pot does the hard work. Just throw everything in there and at the end of the day you'll have some fabulous meat. 

The Topping: 
I feel like cole slaw is a non-negotiable topping for pulled pork. It just compliments the meat so well. You can go the super easy route with a packaged slaw and dressing, which takes approximately 25 seconds to empty into a bowl and toss together. That would make this whole meal ridiculously easy! But since the filling was so simple to make, I upped my slaw game a bit and referred to a cole slaw recipe from Max's mom. I cheated a bit and grabbed a package of broccoli and cabbage slaw for the base, then per her recipe added half a shredded onion, and a finely minced dill pickle. The dressing was 3/8 cup mayo, 1 Tbs. sugar, 1/2 tsp lemon juice and 1/4 tsp mustard (I salt and peppered to taste). The onion and pickle put the slaw over the top - if you have the extra time, definitely try this twist!


The Side: 
We are getting delicious local corn in our CSA box each week so I made this Spicy Skillet Corn from The Table Blog. Fun fact, The Table Blog is based in Nashville and belongs to our CSA! (The farms are located right in between Nashville and Huntsville.) I also tried my hand at homemade corn tortillas this day! I have a bunch of masa leftover from the corn pudding I made last month, and the dough is simply half masa, half warm water and a touch of salt. The dough needs to rise for an hour, but once that's done they cook up super fast (Parker also had so much fun rolling the dough balls around!). 


Super Easy BBQ Pulled Pork

Ingredients 
3-5 lb. pork shoulder
one bottle BBQ sauce
one 15 oz. can diced pineapple in own juice, undrained
all-purpose seasoning

Directions
Coat bottom of a crock pot with some of the BBQ sauce. Rub pork shoulder with all purpose seasoning and place in slow cooker. Pour the rest of the BBQ sauce over pork, and follow with the entire can of pineapple and juice. Cook on high 6ish hours or low for 10. When ready to serve, remove meat and place in a big bowl. Use forks to shred. Add sauce and/or pineapple from crockpot to meat as desired. Serve on buns, or tortillas for Taco Tuesday!


Cole Slaw

Ingredients
3/8 cup mayo
1 Tbs, sugar
1/2 tsp lemon juice 
1/4 tsp mustard
salt
pepper
one package pre-shredded slaw
one dill pickle
half an onion, shredded

Directions
In a large bowl, mix first four ingredients. Salt and pepper to taste. Add slaw, pickle and onion. Toss and serve on top of the pork.
