Double Decker Veggie Sandwiches with Pepperidge Farm



I've always loved a good veggie sandwich, and after nine years as a vegetarian, I got pretty good at making them. And, while I'm no longer a vegetarian, I still find myself choosing meatless options from time to time since they are usually lighter, but can be so tasty too! Enter the double decker veggie sandwich with Pepperidge Farm Farmhouse® Hearty White Bread
The fact that it's double decker makes it special and a bit decadent, but it's still a bite that will leave you feeling good afterward. 


I started with the Farmhouse Hearty White Bread, which boasts a new and improved taste. The slices were heavenly soft and I think they'd make a perfect PB&J. For the veggie sandwich, however, I toasted the slices so they would hold up to all the veggie goodness. Here's what else you'll need:

Ingredients

- Pepperidge Farm Farmhouse® Hearty White Bread, toasted

- Avocado, mashed (I also stir in a bit of lemon juice)

- Herbed cream cheese

- Assorted sliced or shredded veggies (I like cucumber, spinach and carrots)

Everything seasoning (poppy seeds, sea salt, sesame seeds, garlic, onion)

- Sliced cheese (I used provolone)




Directions

Take a toasted slice of the Farmhouse Hearty White Bread and spread a layer of cream cheese, then top with the cucumber and seasoning, and slices of cheese. Layer both sides of the next slice with cream cheese, add it and then the avocado and the rest of the veggies. Follow up with the last slice of the Farmhouse Hearty White Bread (go ahead and spread that last slice with cream cheese before putting it on). Slice and add toothpicks if you wish!
